Soil: sand soil on granite pebbles.
Grape Varieties: 100 % Pinot Gris.
WINE MAKING:
Biological viticulture aims to bring balance and forces of life to the soil and the vines. Short pruning of the vines to keep yields low, hand picking at optimum maturity. Gentle pressing of the grapes in whole clusters in pneumatic presses, fermentation with indigenous yeasts (element of the terroir, enhances depth and complexity in the wines) in ancient oak casks (we do not use new wood to preserve the specific fruitiness), the wines are bottled between May and September
TASTING NOTES:
Subtle and delicate nose of fresh white mushrooms with smoky and buttery notes. Rich and well structured on the palate, crisp and supple thanks to a lively acidity. Dense, concentrated wine showing a very elegant and persistent finish.
SERVING SUGGESTIONS:
Perfect accompaniment to risotto with mushrooms, white meats, poultry, lamb, duck, goose. Pairs very well with grilled salmon, tuna, as well as Asian cuisine and hard cheeses.
